- Brief description of viticulture, fermentation, vinification and maturation: Hand harvest, manual bunch selection, fermented 50% in 1200 litre amphorae, 50% in cooled stainless steel tanks. 11 days on skins with gentle push downs and pump overs. Maturation: 6 months in inox tanks and 5 months in 2 pieces of 1200 litre amphorae.
