- Brief description of viticulture, fermentation, vinification and maturation: The grapes are pressed in full bunches after manual harvesting. It was kept at low temperature by slow fermentation in a 100% choir steel tank. Then we stirred it on a fine broom for months. Finally, we clarified and bottled.
