After the start in 1999, it took 10 years to make a traditional method sparkling wine. This is a defining product of the wine region’s past, present and, hopefully future. After the initial years, since 2013 all the sparkling wines are made entirely within the walls of the winery.

- Brief description of viticulture, fermentation, vinification and maturation: Low yielding grapes harvested fast, early by hand. Gentle whole bunch pressing, a very little (1 month) ageing in oak barrels, and a long (2,5-3 years) lees ageing period following the bottle fermentation.
